Coconut Barfi Recipe
2 cups fresh grated coconut
1 cup Sugar
½ cup Water
¼ cup Ghee
1 tsp maida
¼ tsp Cardamom powder
1/4tsp safforn
Coconut Barfi Preparation:
In a thick pan, add sugar and water and boil it on a moderate flame till the syrup thickens. Now add fresh grated coconut powder and stir till dry.
Take another pan, add ¼ cup of ghee then add the 1 tsp of maida flour, fry it on low flame till it turns light brown and this to the coconut mixture, along with saffron and cardamom powder. Cook on medium flame by stirring very often until the mixture leaves the sides of the pan. Now add some more ghee and stir once.
Take a plate and grease it with ghee all the sides and pour the coconut mixture into the greased plate and let it cool for sometime then cut into pieces. Coconut burfi is ready to serve and to store in an airtight container.
