Kaddu Ki Sabzi Recipe
1kg Kaddu or pumpkin chopped into cubes
6 finely chopped Green Chilies
1 tsp Turmeric Powder (Haldi)
1/2 tsp Garam Masala Powder
1 tsp fenugreek seeds
1 tsp Coriander Powder
2 tsps Sugar
1 tsp Amchoor powder
A pinch of Hing (asafetida)
1 tbsp Oil
Salt to taste
Kaddu Ki Sabzi preparation:
In a pan heat oil, then add fenugreek seeds, add a pinch of hing, chopped green chilies and sauté well, then add pumpkin pieces , add 1 tsp of turmeric, salt and coriander powder saute it well.
Now on low flame of heat add 1 tsp of water to the ingredients in a pan and cook till pumpkin turns tender. Then add sugar, amchoor or dried mango powder along with garam masala powder and mix well and cook for another few minutes on low flame till water gets and evaporated from Kaddu Ki Sabzi.
