Making the pulao masala:
Grind all the above mentioned Pulao masala ingredients in a small jar in the mixer grinder to a fine powder.
Preparing paneer pulao:
Wash and soak the basmati rice in for about 30 minutes.
Cut onions into thin slices and chop the mint leaves. Crush the ginger, garlic and green chilli to a paste in a mortar-pestle.
Chop the paneer /cottage cheese into cubes and fry them in the ghee till light golden colour and keep aside.
Heat ghee in a pot or a pan and add the bay leaf then add the thinly sliced onions and saute till the onions start to turn golden brown.
Add the ginger, garlic and green chilli paste, saute and add the mint leaves and the ground pulao masala and fry. Then add green peas and saute for 2-3 minutes.
Now drain the water from rice and add and saute for a minute. Add water, lemon juice, salt and stir well.
Cover the pan tightly with a lid and on a low to medium flame, cook till the rice grains are cooked. (if the required you can add some more water).
Once the rice is cooked, then add the pan fried paneer cubes or cottage cheese and mix gently with the rice.
Cover the pan and allow the paneer to be in the rice for 5 minutes. This makes the paneer soft and it also absorbs the aroma of the pulao.
Remove from flame and garnish with mint leaves and fried paneer.
Now the Paneer pulao recipe is ready to serve
Serve with raita or dal fry or dal tadka.
